Roasted pork ramen noodle


A ramen restaurant opened in Boston recently.  It's really famous and popular so everyday so long line is in front of the restaurant.  Actually one of my friends was in the line over 3 hours!  I am sure it must taste good but can't wait for hours outside such a cold day (almost frozen...)

Still I want to eat ramen!  I went to ramen places one a week when I was in Japan but since I came to Boston, I've never been.  That's why I made ramen by myself with a roasted pork I made the day before yesterday.


Roasted pork ramen noodle (1 serve)
  • 1 pack of ramen noodle
  • pork soup stock from Japanese braised pork
  • soy sauce
  • chinese chicken soup stock
  • braised pork
  • seaweed sheet
  • canned corn
  • dried wakame seaweed
  • menma
  • green onion

1,  Soak dried wakame seaweed in cold water for the time package says.  Cut green onion into thin slices.  Cut Japanese braised pork into thick slices.

2,  Boil the pork soup stock and add soy sauce and chinese soup stock as much as you like.

3,  Boil the ramen noodle for the time package says.  Put boiled soba up to a colander then put in a ramen bowl.

4,  Pour the pork soup to the ramen bowl and place wakame, pork, corn, seaweed sheet, menma and green onion on the ramen noodle.




I was so surprised that it was close to the ramen I had at ramen places in Japan!  Perhaps, better than that..., haha:))  Anyway, it was nice to have ramen in a warm room such a cold day without long line!!

Rice omelette with ume plum sauce



It seems I caught a cold yesterday because I was outside for long hours to see the regatta race.  When you catch a cold, what do you wanna eat?  For me, I get the urge to eat something mild and not so strong and salty.

The rice omelette today I made doesn't have strong taste but the more you chew it, the more flavorsome it becomes.  




When I made an Omu-rice (rice omelette),  I made an omelette and flavored rice separately but this time, I just mixed all ingredients of rice omelette and pan-broiled.  Even thought it's easy, the taste is great and complicated!!


Rice omelette with ume plum sauce (2 serves)
  • 1/2 pound of cooked rice
  • 3 eggs
  • 2 Tbs of mayonnaise
  • 1 Tbs of hijiki + 3 Tbs of water
Ume plum sauce
  • 1 cup of water
  • 1 tsp of dashi powder
  • 3 pieces of ume plum
  • 1 green onion
  • 2 tbs of potato starch or corn starch + 4 tbs of water 

1,  Make ume plum sauce.  Cut a green onion into thin slices and Remove seeds from ume plum and chop into a past.  Boil water in a pan and add dashi powder, green onion and ume plum.  After that, add starch and water and boil until thick.



2,  Soak hijiki in water for 15 minutes of so.  Mix all ingredients of rice omelette except butter (This time I used Japanese anchovy but if you don't have it, that's totally fine)



4,  Heat a pan and 1 tsp of butter until butter melt and become light brown color.  After that,  add 1/2 of rice omelette ingredients and make omelette shape with spatula.  Make another omelets in this way.


5,  Place the omelette on at the plate and if you would like, you can tear seaweed seat and green onion




It has really deep and delicate taste.  Even if I don't have a cold, I want to eat it again!


Anyway, I'm gonna go to my bed hoping I can completely recover by tomorrow morning!  Have a good night :)

Seaweed garlic risotto with Shrimp and Edamame



I was looking forward to coming today because I had a plan to have lunch with my friends.  It has been 4 months since I met them last time so I was so excited!!  We went to a dim sum restaurant in China town and ordered so many dim sums like dumpling, steamed meat ban, turnip cake, spring roll…and more! (It was so tasty that I completely forgot to take pictures... ;(( )  I really enjoyed nice food and talking with them.  Actually we talked over 4 hours!  It was so much fun.  Recently they are so busy for working and studying and work so hard for their dream so today they really inspired me.  I though I had to make more effort like them!!  Thank you, friends :)

Anyway, when I got to home, I was so happy and full but after a couple of hours I felt hungry suddenly.  I remembered that the Japanese risotto I made this week was so good.  I was almost addicted to it so made another kind of Japanese risotto tonight!


Seaweed garlic risotto with Shrimp and Edamame
  • 180cc of white rice
  • 2 Tbs of olive oil
  • 600cc of hot water (☆)
  • 1 Tbs of dashi powder (☆)
  • frozen shrimp as much as you like
  • edamame as much as you like
  • 1 sheet of seaweed sheet
  • 4 Tbs of mozzarella cheese
  • 1 Tbs of fried garlic
  • 1 tsp of soy sauce
  • black pepper

1,  Put (☆) in a pot and heat until quite hot then keep it warm
2,  Heat olive oil and a pan until hot and add white rice (don't wash!!) then stir-fry for 5 minutes with low fire
3,  Add 1/3 of  dashi soup and boil until dry
4,  Add another 1/3 of dashi soup and boil until dry and do same thing again.  It takes 10 minutes since you add dashi soup first time.
5,  Add frozen shrimp and edamame and boil until shrimp changes color completely
6,  Take a pan off a fire and add teared seaweed sheet, fried garlic, cheese, soy sauce and pepper then mix well


I realized that a seaweed sheet went with cheese very well!  You should try it!!




By the way, my friends and I went to a pastry shop after lunch.  I think it is the best pastry shop in Boston!  I bought some cakes home as dessert.

Hijiki Tofu Hamburg



Do you know "Hijiki"?  It's  one of Japanese seaweed and good for lots of Japanese food like boiled dish, rice boll, Takikomi-gohan and more.  So Japanese people are familiar with it very much.  We often use dried one.  Originally the color is deep green it changes the color to black like this picture after crop.

I heard that recently so many American people like hijiki because it has a lot of nutritions like calcium and iron and actually the half of it is just fiber!  So it's super healthy!!  And to ladies's joy it even makes their skin moisture and white.  Of course, taste really good!




Tonight I made a tofu hamburg with hijiki.  I needed some healthy food because recently I was addicted to potato chips...  I know I can become fat easily if I eat too much but can't stop eating because American potato chips are so nice!!

Anyway, I'm showing how to make a tofu hamburg form now!!


Hijiki Tofu Hamburg (2 serves)
  • half pound of silk tofu (☆)
  • 1 Tbs of dried hijiki (☆)
  • 1/3 of carrot (☆)
  • 4 Tbs of panko (☆)
  • 2+1/2 Tbs of mayonnaise (☆)
  • 1 tsp of dashi powder
  • 1/2 tsp of soy sauce (☆)
  • 1 tsp of corn starch (☆)
  • 1 Tbs of sesame oil
  • Seaweed sheet
  • ponzu or soy sauce for sauce

1,  Wrap tofu with kitchen paper and put it on the microwave for 2〜3 minutes for draining
2,  Chop carrot into small pieces and cut seaweed sheet into long and narrow
3,  Add 3 Tbs of water to hijiki and leave for 20 minutes until completely soft (If you use tepid water, leave for 10 minutes)
4, Put all of  (☆) in a container and mix them very well with folk

5, Put a bit of oil on your hand and make four flat bolls then wrap with seaweed sheet (If it's too soft to do that, add some panko.)


6,  Add some corn starch all side

7,  Heat a pan and sesame oil until quite hot and sauté tofu hamburg with medium fire until brown
8,  Add ponzu or soy sauce when you eat




This time I just add soy sauce and ponzu when I ate but actually other sauce can go well with this hamburg, for example, lemon juice, sesame sauce, dashi, ground daikon radish, miso and mayonnaise...and more!!  Please try your original sauce and if you find your favorite one, let me know!

Oh actually, I haven't eaten any potato chips yet today.  Yeah :))

Daikon radish salad with ume plum dressing



It was "Columbus day" today.  Columbus found the Americas about 510 years ago so it's a big holiday as celebration.  Since a happy monday today and yesterday I met one of my friend after a long time who came form Japan, I had wine kind of too much last night because I was so happy!  That's why this morning I wanted to have something refreshing.

Do you know Japanese ume plum (called umeboshi)?  It's a kind of pickles.  It's really sour and refreshing. 



 It has a lot of citric acid so makes you recovery from fatigue and to my joy it even helps recovering from a hangover!  That's great so I made a salad with ume plum dressing.


Daikon radish salad with ume plum dressing
  • 0.75 pound of daikon radish
  • 1/2 of green onion
  • 1 sheet of seaweed sheet
  • 0.15 oz of dried bonito shaves
Ume plum dressing
  • 3 pieces of ume plum 
  • 3 Tbs of olive oil
  • 1/2 Tbs of soy sauce
  • 1/4 tsp of wasabi

1,  Remove a seed from ume plum and chop it to a paste with a knife then mix all ingredients of dressing

2,  Cut a daikon radish into julienne strips (called Katsura-muki) and cut into thin sticks


3,  Cut green onion into thin slices
4,  Shred a seaweed sheet and put on a plate.  Place cut daikon radish on it and put green onion and dried bonito shaves then put ume plum dressing on it



It made me so refreshing so I could enjoy happy monday:))  Thanks umeboshi, you are great and love you♡

Roast beef roll sushi


I made a big roast beef salad the day before yesterday.  But still I had a lot of leftover roast beef so I was thinking what I should use the roast beef for while I was at a grocery store.  I found a salmon roll sushi at sushi section and one idea flashed on me it I use roast beef for sushi like salmon it could be great!


It is not so big deal to make roll sushi even though it looks luxurious and time-consuming work so I highly recommend to make roll sushi for a party or something like it.

I would like to show you an easy knack for roll sushi this time! 



Roast beef roll sushi (8 pieces)
  • 4〜5 slices of roast beef
  • 1/4 of avocado
  • arugula
  • mayonnaise
  • wasabi
  • a sheet of sea weed sheet
Sushi rice
  • 1/2 small bowl of cooked rice
  • 2〜3 Tbs of sushi vinegar
  • a green onion
  • salt
  • white sesame seed

1,  Cut a green onion into thick slices and add salt then leave for 15 minutes to remove water.  Then wash the green onion carefully to remove salt and squeeze with kitchen paper completely.




2,  Add sushi vinegar to cooked rice before cool down and add green onion and white sesame seed then mix them very well

3,  Wrap a sushi mat with parasitic wrap completely

4,  Cut a sea weed sheet into 2/3 of a sushi mat

5,  Spread roast beef all over a surface of a sea weed sheet and then turn it upside down


6,  Spread sushi rice all over a surface of a sea weed sheet and put wasabi on the center of the sushi rice


7,  Place half cut 1/4 of avocado, arugula and mayonnaise like a below picture  (I used baby spinach this time.)

8,  Roll up the sushi mat from the near side at a heat quickly and leave it for over 10 minutes then wrap the sushi with parasitic wrap


9,  Wipe a knife with kitchen paper impregnated with oil for not sticking rice

10,  Cut the sushi into 8 pieces.  Don't remove the parasitic wrap.



It's a really beautiful sushi even if I do say so myself!  Not only looks but also taste was amazing.  Actually my friend said it's the best roll sushi which he had eaten!  I was so glad!!




It seems difficult to make roll sushi but actually it is pretty easy if you know the knack.  I am happy if you can make a good tool sushi with the knack I showed!!

Seaweed ginger soup



I got a cold last week and it seems like have a cold still now... it's terrible to be having a cold for over one week!!  I have no appetite even me who is always hungry.  I remember that when I caught a cold, my dad recommended to have something make me warm up, especially ginger.  Well, I'll try to make something which has ginger and also I can make easily!


Seaweed ginger soup (2 serves)
  • 3+1/2 cups of water  (700ml)
  • 3〜4 tsp of chinese chicken soup stock
  • 2 green onions
  • 2 tsp of chopped garlic
  • 2 tsp of  grated ginger
  • 1 seaweed sheet
  • 2 Tbs of sesame oil
  • white sesame seed

1,  Cut green onion into thick slices and beat an egg and tear a seaweed sheet into pieces
2,  Boil water in a small pot and after boil add chinese chicken soup stock and green onion
3,  Heat a pot with high fire and add pour egg evenly in soft spiral motion
4,  Turn heat lower and wait until egg coagulate
5,  Serve it on a deep bowl and add seaweed sheet and pour sesame oil and and sprinkle white sesame seed





Not only when you have a cold but also at cold weather which is coming from now on, I highly recommend this soup!  I am sure it makes you warm up.  Because of this soup, I feel much better now, thanks dad!  I am sleeping from now and sure that I will completely recover from sick when I wake up tomorrow.
