Stir-fried yu-choy with ponzu dressing

One of my friends gave me a chinese green vegetable, the name is "Yu-choy". (Japanese pronunciation is "ใ‚†ใกใ‚‡ใ„" )  Do you know it?  Actually, I didn't know and it was first time to see it.

She said that it tastes like a Japanese mustered spinach and has nice texture.  I was really curious so I tried to cook this immediately after I got my home!

Stir-fried yu-choy with ponzu dressing

  • 1 pack of yu-choy
  • 3 eggplants
  • 1 Table spoon sesame oil
  • 1 tea spoon chopped garlic
  • salt

◆ponzu dressing
  • 1 Table spoon sesame oil
  • 3 Table spoons ponzu
  • 1 tea spoon white sesame seed

  1. Mix all ingredients of the ponzu dressing
  2. Wash yu-choy and cut it about 2 inches in length, and wash and slice eggplants into wedges
  3. Put sesame oil in a pan and heat it with low fire
  4. Put chopped garlic into a pan with low fire and wait until you can smell garlic
  5. Put cut eggplants into a pan and stir-fry with medium fire
  6. Make sure eggplants are stir-fried very well, put cut yu-choy and stir-fry them with medium fire quickly and put a little bit of salt.  Don't stir-fry too much!
  7. Serve stir-fried eggplant and yu-choy and put dressing on it

What my friend said is absolutely true!  It tastes like some Japanese vegetables so goes with Japanese seasonings very well!!  Oh actually, yu-choy has lots of vitamin A, C and calcium.  So it is good for your health, I think.  Let's try if you find this vegetable :))

Teriyaki chicken bagel

Maybe you know one of the famous food in NY is a bagel but I have never tried to have it there even though I went to NY last weekend and went to a famous bagel place.  (I don't know why but I ordered a panini there... that's funny!)  I feel a little bit regret about it so that's why I immediately decided to make a bagel sandwich for lunch when I remembered that I had a leftover chicken teriyaki!!

Do you think chicken teriyaki bagel is kind of strange because teriyaki is Japanese but bagel is not?   But actually there are so many teriyaki sandwiches in Japan and Japanese people love it!!!  Basically they use normal sandwich breads, but I am sure a bagel goes with teriyaki very well also!!

Teriyaki chicken bagel
  • 1 sesame bagel
  • 1 slice of chicken teriyaki
  • 1 slice of cheese
  • 3 green-curl lettuce leaves
  • cherry tomates
  • mayonnaise
  1. Toast a sliced bagel and spread desired amount of mayonnaise both side
  2. Put a slice of cheese on the chicken teriyaki and heat them in a microwave oven or grill until cheese is melting
  3. Wash lettuce leaves and wrap them in a kitchen paper to remove water and then tear and put on the bottom of the bagel
  4. Put chicken teriyaki and half cut cherry tomatoes on the lettuce
  5. If you have extra teriyaki sauce in the container, you can add some mayonnaise and mix them very well.  It is sandwich sauce so put this sauce on the chicken teriyaki.  If not, put just mayonnaise.
  6. Put a top of bagel slice on the chicken teriyaki

It was so beautiful day today so I had it outside.  It likes a picnic!!  So nice!!!

Even if I have an option to go to a nice restaurant,  I think I prefer to have sandwiches and a cup of iced coffee under the sun♡

Japanese Tuna tartar salada

My friend grows cherry tomatoes at her garden and she gave me them!  It tastes really sweet, like fruits!!  So I decided to make a salad with the tomatoes which goes with beer for dinner because my room is real HOT (It's on 3rd floor...) and I really needed a beer lol

While my room is very hot, recently the weather in Boston is like fall.  I feel kind of sad because it means summer is ending soon... My parents are living in Nagano where is located middle of Japan.  They said that Nagano's temperature is still over 100°F everyday!!  That's crazy X((  How about your town?Still hot??

By the way, do you like a canned tuna fish??  I like it and use often so always have in my storage.  I wanna show you a kind of tuna salad recipe which is made with Japanese ingredients.  It is super easy but tastes really good!!!  After you make it, I recommend to have with your chopsticks :))

Japanese Tuna mayonnaise salada

◆Tuna tartar sauce
  • 1 canned tuna (non salted and oil-free is better)
  • 2 Table spoons soy sauce
  • 2 Table spoons mayonnaise
  • 1 Table spoon sesame oil
  • a little bit of wasabi    (If you would like to have with your child, you don't have to use this.)
◆Salad
  • Arugula
  • Cherry tomate
  • Avocado
  • Sesame oil
  • White sesame seed
  • Kosher salt

1.  Drain tuna and put all ingredients for Tuna tartar sauce in a small bowl and mix them very well
2.  Cut tomato and avocado as you like
3.  Put Arugula, sesame oil and sesame seed in a large bowl and mix them very well
4.  Put the salad you made at step 3 on a large plate and put the tuna tartar sauce you made at step 1 in the center of the salad and put tomato and avocado as you like
5.  Dredge kosher salt on the salad as much as you like

Oh, by the way, after I made this salad, I noticed that I forgot to put a bottle of beer in the fridge last night!!  Oh my god, I couldn't enjoy this one with a beer so I had a glass of white wine instead of a beer.  Fortunately, I realized that this salad really goes with white wine!!!  So happy :))
