Avocado wasabi mayonnaise grilled cheese


One of my favorite food is grilled cheese.  I clearly remember about the grilled cheese my host mom made for me still now.  The ingredients were really simple.  Just white bread, cheese and butter but taste was so good and can't forget it!  Actually my host mom told me her recipe and I often make it for my brunch.

I woke up late this morning and I was thinking to make grilled cheese as usual and when I opened the fridge, I found an avocado which was my favorite food and I though if I added the avocado to the grilled cheese, the taste could be so delicious!!

Avocado wasabi mayonnaise grilled cheese

・ 2 slices of white bread
・ 1slice of cheese
・ Half avocado
・ 2 Tbs of mayonnaise
・ 1/2 tps of wasabi
・ 1 tps of butter
・ Salt

1,  cut an avocado into dice and mush it lightly and add mayonnaise and wasabi and mix them very well
2,  spread the avocado dip on a bread and add cheese and sand with another bread
3,  heat a pan until quite hot and add the bread and grill it until brown and turn and grill another side

My choice was correct!  It was so delicious and I was sure not only Japanese but also american love this grilled cheese.  I could spend really nice Saturday morning with this grilled cheese.  After the brunch,  I sent an email to my host mom and told her this recipe.  I hope she loves it!!

Pork stir-fried rice



My roommate came back to home so hungry and tired and he asked me can you make something for me quickly?  Sure!!  That's my pleasure and I would be happy to do that for you!!  Fortunately I had cooked rice and pork in freezer so I said him I would make dinner for you in 15 minutes! I was sure that I could make delicious dinner so easily because I remembered I had a green onion sauce just yesterday I made and would work very well!


Pork stir-fried rice (1 serve)

  • 1 bowl of cooked rice
  • 1 slice of pork lion
  • 1 egg
  • 1 green onion
  • 2〜3 Tbs pf green onion sauce
  • 1 Tbs of sesame oil
  • 1/2 Tbs of soy sauce
  • salt 
  • black pepper
1,  Cut a pork lion in cubes and add a little bit of salt and pepper
2,  Cut a green onion thin slice
3,  Beat up an egg and mix with cooked rice
4,  Heat a pan until quite hot and add sesame oil with medium fire
5,  Add cubed pork and stir-friy until brown and then add sliced green onion
6,  Add rice and egg and stir-fry well
7,  Add green onion sauce and then pour soy sauce evenly and draw a spiral pattern and add salt and pepper as much as you like


Actually it was less than 10 minutes to be done with my cooking.  My roommate was so surprised I was able to make dinner so quickly in addition it was so yummy for him to my delight!  He said that it was the best stir-fried rice.  I was so glad to hear such a word.  The green onion sauce can be a special seasoning which act like magic I think even if I do say myself.  But only one thing I am sad is that there are no more green onion sauce in my fridge because he ate all surprisingly.  Ummm... I need to make more.  Maybe I should make double amount next time!!

Green onion sauce



I was talking with my friend about the yakiniku restaurant which will open in Boston this fall.  The restaurant's name is "Gyukaku".  It is very popular in Japan and of course I do love it!!  My friend and I would like to go there as soon as possible but we think that maybe it is better for us to go there  after a while because otherwise we have to wait in a so long line.  But I can't wait and wanna eat yakiniku right now!!  So tonight I made green onion sauce which tastes like a yakiniku restaurant!!


Green onion sauce
  • 4 green onions
  • 2 tsp of chopped ginger
  • 2 tsp of chopped garlic
  • 2 tsp of chinese chicken soup stock
  • 1 tsp of soy sauce
  • 1 tsp of sugar
  • 1/2 cup of sesame oil

1,  Cut green onions into very tinny pieces
2,  Put all ingredients except sesame oil into a heat-resistant container
3,  Put sesame oil and heat until you can see white smoke
4,  Add the sesame oil to the hear-resistant container and mix them very well
     (Sometime sesame oil spit o be careful!)




I just put this sauce on the grilled pork.  It was simple and easy but taste really good!  I am sure this sauce is much better than the yakiniku restaurant one even if I do say myself :)  Also this sauce goes with everything, like tofu, chicken, beef, rice, soup, scallop and shrimp.... You can keep this in the fridge for one week or so.  So please try to use for various ways and find your favorite combination!!

Wasabi ponzu vegetable marinade



I woke up early because it was so chilly this morning.  Recently I feel autumn is coming by the day.  Actually I watched a weather news this morning and the caster said that summer is completely ended here in Boston.

Despite the situation, I had a lot of summer vegetables in the fridge.  I often make marinade when I have vegetables I already used a little bit.  


Wasabi ponzu vegetable marinade
  • 1 eggplant
  • 1 zucchini
  • 1/2 pack of fruit tomato
  • 4 Tbs of olive oil (☆)
  • 6 Tbs of ponzu (☆)
  • 1/2〜1 tsp of wasabi (☆)
1,  Cut eggplant and zucchini into thick slices
2, Mix all of  (☆) in a small bowl
3,  Heat a pan until quite hot and add olive oil and grill vegetables with medium fire
4,  Move the grilled vegetables to a deep dish and add mixed marinade sauce until the grilled vegetable is quite hot


This marinade sauce goes with any vegetables!  Mushroom, onion, potato and more!!  Also this marinade is good for sandwiches.  Actually I already decided that I'll make a vegetable marinade sandwich for tomorrow lunch.  I am going to my favorite bakery store tomorrow morning!!

Takikomi-gohan


My roommate bought a rice cooker!  Finally I can cook rice anytime I would like.  Thank you so much,  I was so happy and made takikomi-gohan as my first rice cooking in America.

I know a really really nice Japanese chef in Boston.  I am sure that he is the best chef!!  He is my cooking teacher also and teaches me  a lot of cooking.  The takikomi-gohan I made tonight is from his recipe.  I highly recommend you should try this takikomi-gohan!!


Takikomi-gohan
  • 1+3/4 cups of white rice
  • 2 cups of water
  • 1 carrot
  • 2 slices of chicken thigh
  • 1/2 pack of enoki mushroom
  • 3 Tbs of sugar (☆)
  • 1 Tbs of mirin (☆)
  • 4 Tbs of soy sauce (☆)
  • Edamame
Shiitake-mushroom
  • 0.5 oz of dried shiitake mushroom
  • 2 Tbs of sugar (★)
  • 1/2 Tbs of mirin (★)
  • 3 Tbs of soy sauce (★)

Shiitake-mushroom
1, Pour in just enough tepid water to cover dried shiitake mushroom and cover the surface with plastic wrap completely and leave for 1 hour 
2,  After 1 hour, make sure the shiitake mush room absorb water and became completely soft and then cut thick slice
3,  Put the shiitake mushroom in a small pot and pour in just enough water which is used for soak shiitake mushroom
4,  Heat it until boil and skim the scum then add sugar and add  (★) of sugar and mirin and cover with aluminum foil
5, After boil, add (★) of soy sauce and boil until cooking water become about half


Takikomi-gohan
1, Wash the rice and leave it in the water in the cooker for 1 hour or so
2,  Cut carrot into thinly slices, chicken thigh into bite-size chunks and enoki mushroom half
3,  Put 3 cups of water in a large pan and heat and boil
4,  Add chicken thigh to boiled water and skim the scrum carefully and then add carrot and enoki mushroom
5,  Add all of (☆) and boil until cooking water become about half
6,  Add the cooked chicken thigh, carrot, enoki mushroom and 3 Tbs of cooking water to the rice and start the rice cooker
7,  Wrap cooked shiitake mushroom in kitchen paper and wring it dry out
8,  After the rice is done, add the shiitake mushroom to cooked rice and mix them very well
9,  Serve takikomi-gohan in a bowl and put edamame on the top



Newly made Takikomi-gohan's taste is of course awesome but even though it gets cold, taste still so nice!  So I recommend takikomi-gohan for lunch box.  

Japanese people often eat takikomi-gohan especially in fall.  When I was in Japan, my mom often made takikomi-gohan with seasonal ingredients in fall.  I realized that that's why I wanted to make takikomi-gohan.  

It seems like that Boston has really beautiful red leaves in fall.  I would like to view it having a lunch box with this takikomi-gohan♪

Green tea fresh fruits juice



I had a plan this early morning but unfortunately I completely overslept so had no enough time to have breakfast!!  I tried to make a fresh fruit juice quickly and at that time remembered that I had a sweetened green tea powder and so I added it while I was wondering if it went with the fruits juice well.  I was so curious!!


Green tea fruit fresh fruit juice (2 cups)

  • 1 banana
  • 1 apple
  • 2 cups of milk
  • 2 Tbs of honey
  • 3〜4 Tbs of sweetened green tea powder
1,  Put all of above ingredients in a juice mixer
2,  Turn on the juicer mixer and blend until creamy


In conclusion, this mix fruits juice was so nice!  Refreshed, fruity and a little bit sweet then I could taste green tea flavor after.  I could get off a hot start today with this juice!  For me, breakfast is really important because I think if I can have nice breakfast I feel like it will be a nice day, don't you think?  I will definitely make this juice again sometime soon but I hope I never oversleep again!!

Teriyaki chicken and eggplant pizza





I was so surprised at my friend's sudden visit!!  No way, let me know before you come to my home!!  I didn't have so many ingredients in my fridge so we tried to make a pizza with leftover Teriyaki eggplant the day before yesterday I made!



Teriyaki chicken and eggplant pizza


pizza dough
  • 2+1/2 cups of all purpose flour
  • 3/4 cup of water
  • 1+1/2 Tbs of olive oil
  • 2 tsp of dried yeast
  • 1 Tbs of sugar 
  • 1/2 tsp of salt


pizza dough
1,  Put all ingredients of pizza dough into a Ziploc bag and knead the dough on the bag with both hands for 5~10 min until the dough holds together
2,  Make flat the dough with your hands or a rolling pin and make holes with a fork except the edge


Pizza
1,   Cut into cubes teriyaki eggplant and chicken thigh
2,  Heat a pan until site and add bit of oil and add cut chicken thigh and stir-fry it with medium fire until brown
3,  Add cut teriyaki eggplant and extra sauce and mix them
4,  Cut green onions into thin slices
3,  Spread mayonnaise in the dough and put green onions, teriyaki eggplant and chicken and  then cover them with cheese
4,  Put the pizza into the 425°F oven and bake for about 20 min


It was so much fun to make a pizza with friends!  I think the pizza we made was not perfectly good like a pizza I usually eat at a pizza place but I prefer to make a pizza at home because I realized that the pizza hot from the oven is the best pizza for me!!!
